The grapes for this wine were sourced from a North East facing 18 year-old vineyard block on the slopes of the Helderberg Mountains. The predominant soil type is decomposed granite.
Classic whole-bunch pressed juice fermented in older barrels (70%) with a portion skin contact fermented in open top tanks (30%) for about 15 days. Spontaneous alcoholic and malolactic fermentation. No additions apart from SO2.
Sémillon pairs incredibly with spicy (not too hot) foods due to its moderate body and fresh acidity. Try this wine with sushi, Asian or Indian spices, pork or poultry.
