Description
Here be Dragons 2018 is a blend of the whole bunch fermented and crushed destemmed grapes, thus making for a single origin skin and stem contact Sémillon.

This is the more experimental wines of the two. As this is my maiden vintage and I’ve haven’t done skin and stem contact on Sémillon before, this is our challenge, our unexplored territories.” – Jolette Steyn
In the vineyard
The grapes for this wine were sourced from a North East facing 18 year-old vineyard block on the slopes of the Helderberg Mountains. The predominant soil type is decomposed granite.
In the cellar
Portion crushed destemmed and fermented on skins (40%) and a portion whole bunch fermented (60%), so skin and stem contact. Spontaneous alcoholic and malolactic fermentation.
Pairing suggestions
Sémillon pairs incredibly with spicy (not too hot) foods due to its moderate body and fresh acidity. Try this wine with sushi, Asian or Indian spices, pork or poultry.
