Description
A tremendous deep, rich ruby colour in the glass. The wine shows an intricate and vibrant bouquet of aromas that jump out: blackberry compote, cassis, black plums, tobacco leaf and Christmas fruit cake. Gorgeous medium-bodied wine with ripe red fruits on the palette followed by an elegant tannin structure. Ageing potential of 8-10 years. Alc: 14% TA: 5.65 g/L pH: 3.63 RS: 3.07 g/L

<p>Three specific blocks used to produce this wonderful Stellenbosch Cabernet Sauvignon and each vineyard was vinified separately.</p>
In the cellar
<p>Upon arrival at the cellar the grapes are pre-chilled before processing. Once chilled they are gently destemmed, and the berries cold soaked for two days before fermentation occurs. A combination of whole and crushed berries allows for a slow extraction of tannins and an intense fruit driven profile. The wines spent between 15 and 20 days on the skins depending on the tannin structure, with three pump overs per day and then pressed to undergo malolactic fermentation in tank. After completion, the wine was<br />
aged for 18 months with various types of oak used, none new, before blended and prepared for bottling.</p>
